Tonight I made one of my favorite meals. It reminds me of home, and the leftovers are always great (even for breakfast... actually, it's best then!). If I'd remembered how good it was I would have made some Bisquick biscuits for a bread, probably didn't need them anyway. :)
The main dish (and really the only thing I cooked as opposed to heating up) is Pork Chops & Rice. I love it! Not sure where my mom got the recipe from, but I dutifully copied it down and took it with me when I moved away. I served it tonight with green beans and corn. It would have been better with green beans and fried okra, but I wasn't up for buying and frying okra today. Here is the recipe:
Pork Chops & Rice
Vegetable Oil
1/2 Medium Sized Onion (thinly sliced)
1 Medium Sized Bell Pepper (thinly sliced)
4 Pork Chops
Salt & Pepper
1 to 1 1/4 Cup of Rice
14.5oz Can of Diced Tomatoes
14.5oz of Hot Water
In electric fry pan cook onions and peppers in a small amount of oil. Brown pork chops adding salt & pepper to pork chops and onions & peppers. After browning pork chops, add rice, tomatoes, and water. Bring to boil. Cook over low heat for 30-45 minutes.
